2 pie shells
1 pound mild sausage
1 small – medium tomato chopped
1⁄3 cup chopped onion
8 large eggs
2½ cups grated sharp cheddar cheese
salt and pepper to taste
Preheat oven to 350 degrees. Cook sausage and onions in skillet until browned and cooked through. In a large mixing bowl, whisk eggs, tomatoes, salt and pepper together. Drain sausage, if needed, and add sausage and cheese to egg mixture. Stir or whisk gently until mixed and pour into 2 pie shells. Bake until filling is set – about 30 minutes.
