3 cups fresh collard leaves, washed and cut in strips
1 onion, sliced
1 green pepper, sliced
1 teaspoon chopped fresh garlic, optional
1 teaspoon chopped fresh ginger or orange rind, optional
2 tablespoons olive oil
2 tablespoons soy sauce
In a skillet, heat olive oil on medium high. Add all vegetables and sprinkle with soy sauce. Stir constantly until done. Serve with corn bread. Yield: 2 servings.
