4 finely grated carrots
1 pound of zucchini squash
1 large onion, chopped
1 cup of sour cream
1 can of mushroom soup
1  stick of margarine
1 box of cornbread Stove Top dressing mix
Steam the cut up squash and the onion until tender, drain off the water.  Mix sour cream and mushroom soup and add to the grated carrots.  Melt margarine and pour over the stuffing mix, mix well.  Add all ingredients with half of the stuffing mix and pour into a large greased casserole dish.  Sprinkle the rest of the stuffing mix over the top.  Bake at 350 for 40 minutes.
