Grilled Pork, Cheddar and JalapeƱo Sausage

2 pounds mild ground pork sausage
2 cups shredded sharp cheddar cheese
1 small onion, chopped
2 large jalapeno peppers, seeded and chopped
5 garlic cloves, minced
1 teaspoon salt
1 tablespoon pepper
Combine all ingredients until blended. Shape evenly into 12 patties. Prepare fire by piling charcoal on one side of grill, leaving other side empty. Coat grill rack with cooking spray and place on grill. Arrange patties over empty side and grill, covered with grill lid, over high heat (400-500 degrees) 12 minutes on each side or until done. Makes 12 patties.
