1 pound ground beef or chuck
2 tablespoons taco seasoning mix
2 tablespoons ice water
1 cup dairy sour cream
2 tablespoons red taco sauce
2 ounces chopped ripe olives, if desired
1 cup coarsely crushed tortilla chips, divided
½ cup cheddar cheese, shredded
In a medium bowl combine all 3 ingredients; mix well. Press mixture into bottom and sides of tiny tart pans, set aside.
Combine sour cream, taco sauce, olives and ¾ cup tortilla chips. Spoon this filling into each shell, mounding slightly. Combine remaining chips and cheese, sprinkle over each tartlet. Bake at 375 degrees for 10 minutes. Garnish with taco sauce. Yield: 32 tartlets.
