4 whole broiler-fryer chicken breasts, halved and boned
1/4 teaspoon salt
1/8 teaspoon pepper
1 16-ounce can sauerkraut, drained
4 slices (about 4x6-inch each) natural Swiss cheese, halved
1/2 cup prepared Thousand Island dressing
1 tablespoon parsley, chopped
Place chicken in greased baking pan. Sprinkle with salt and pepper. Place sauerkraut over chicken; top with Swiss cheese. Pour dressing evenly over cheese. Cover with foil and bake at 325 degrees up to 1 1/2 hours or until chicken is fork-tender. Sprinkle with chopped parsley. Makes 4-8 servings.
