4 large boneless skinless chicken breasts
1 12-ounce package frozen chopped onion and pepper mix
1 pound smoked sausage
Lemon Pepper seasoning, to taste
Quarter chicken breasts and place in a baking dish. Sprinkle lemon pepper seasoning over chicken. Spread onion/pepper mix evenly over chicken. Cut smoked sausage into 1/4-inch slices. Place these slices evenly over onion-pepper mix. Tightly cover with foil or pan lid. Bake at 350 degrees for 30-45 minutes. Yield: 8 servings.
