2 cans Green Giant kernel corn, drained
2 cans black-eyed peas, drained
1 can Rotel tomatoes, chili style
1 can diced tomatoes, drained
1 bell pepper, chopped
1 sweet onion, chopped
2 tablespoons extra virgin olive oil
2 tablespoons rice vinegar
1/2-1 tablespoon sugar
1/4 teaspoon cayenne
1/4 teaspoon hot sauce
Salt and pepper, to taste
Drain corn, peas and tomatoes. Mix all ingredients and allow to marinate overnight or all day. Serve with tortilla chips or with meat as a side.
