12 fillets of any firm fish
1 package fresh spinach or 10-ounce package frozen chopped spinach
4-ounces mozzarella or provolone cheese, cubed
1 cup fresh mushrooms, chopped
1 small onion, finely chopped
2 tablespoons butter, melted
¼ cup dry white wine

2 tablespoons butter, melted
2 tablespoons flour
¼ teaspoon celery salt
Dash of pepper
1 cup light cream
4-ounces shredded cheddar cheese
Tear up fresh spinach before cooking in small amount of salted water (cook frozen spinach according to package directions). Drain and press out excess liquid. Combine spinach, cheese, mushrooms and onion. Arrange 6 fillets in a greased shallow baking pan. Spread spinach mixture over each. Top with remaining fillets. Brush with melted butter. Drizzle wine over each. Bake at 350 degrees for 20-25 minutes or until fish flakes with fork.

Stir flour, celery salt and pepper into melted butter. Add cream all at once. Cook and stir until mixture thickens and bubbles. Add cheese and stir to melt. Spoon over fish.
