Ingredients
Crunch:
1 cup flour
1 cup pecans, chopped
¼ cup brown sugar
½ cup margarine
Filling:
½ gallon frozen vanilla ice cream
Topping:
3 egg yolks, beaten
½ cup pecans, chopped
2 squares unsweetened chocolate
2 cup confectioners’ sugar, sifted
3 egg whites, beaten
1 teaspoon vanilla
½ cup margarine
Directions
Crunch:
Blend ingredients together, spread in a shallow pan. Bake at 325 degrees for 20 minutes or until brown. Stir and break apart occasionally. Sprinkle 2/3 in 9x13-inch glass dish.
Filling:
Cut ice cream into 1-inch rectangles and cover the crunch. Press ice cream with a wet spoon so that it is seamless and smooth. Freeze.
Topping:
Melt margarine and chocolate squares over low heat. Gradually stir in egg yolks. Add confectioners’ sugar, nuts and vanilla. Cool thoroughly. Fold in beaten egg whites. Spread mixture over ice cream and top with remaining crunch. Freeze.
