3 48-ounce cans low-fat, low-sodium chicken broth
2 medium-sized onions, chopped
5 celery ribs, chopped
5 parsnips, chopped
1 head (8 cups) cabbage, shredded
4 bell peppers (red or green), chopped
8-ounces mushrooms, chopped
10-ounce package spinach, chopped
10-ounce package frozen broccoli florets
10-ounce package cauliflower
2-3 pieces chopped gingerroot
14 ½-ounce can crushed tomatoes
1 tablespoon black pepper
1 tablespoon salt
Combine all ingredients in slow cooker. Cover. Cook on low 6-8 hours.
