|Potato Casserole Supreme|
|3-3 ½ pounds potatoes (about 5 medium/large)
12 ounces small curd cottage cheese
12 ounces sour cream
10-12 green onions, diced
|Quarter potatoes and cook in salted water about 15 minutes or until fork tender. Drain. Cut into bite-sized chunks. In a greased baking dish, make several layers as follows: potatoes, cottage cheese, sour cream, onions, and light sprinkle of garlic and onion salts. Sprinkle grated parmesan cheese on top. Bake at 350 degrees for 30-40 minutes. If made ahead and refrigerated, bake longer until thoroughly heated.
