|1 box scalloped potatoes or 1 ½ to 2 cups thinly sliced potatoes
1 4-ounce pack sliced pepperoni
1 16-ounce can tomatoes
1 ½ cup water
½ teaspoon oregano leaves
1 4-ounce shredded mozzarella cheese
|Heat oven to 400 degrees. Empty potato slices and pack of season mix from scalloped potatoes into ungreased 2-quart casserole dish. Heat tomatoes, water and oregano to boiling. Pour over potatoes and season mix. Arrange pepperoni on top, sprinkle with mozzarella cheese. Bake uncovered for 30-35 minutes. Makes 4 servings. Cook’s note: you may use ½ pound hamburger or ½ pound sausage meat, cook and drain; stir in potatoes.
