1 whole (3-5 pound) chicken
3 tablespoons salt
6 ears corn, cut off cobs
5 medium onions, sliced
½ pound salt pork
1 pod red pepper or 2 tablespoons dried peppers
1 pound okra, chopped
2 pounds lima beans, shelled or dried beans
2 green peppers, chopped
5 large tomatoes, quartered
½ teaspoon black pepper
Cover chicken, sliced pork and salt in water and place in a large cooking pot over campfire. Simmer until meat comes from bones (about 3 hours, according to how hot the fire is). Remove bones, add all vegetables and seasonings. Simmer until mixture is thick, stirring often to prevent sticking to pot. Stew is ready when thick, add more seasoning if desired. Serve hot in bowls.
