Squash Relish

8 cups shredded squash, match stick size
2 cups onion, chopped
2 cups vinegar
3 cups sugar
2 bell peppers, chopped
2 teaspoons celery seed
2 teaspoons mustard seed
½ teaspoons salt
Combine squash, onion and salt in a large pan. Let stand for 2 hours and drain. Combine vinegar, sugar, seeds and bell pepper in a large pan and bring to a boil. Add squash and onions; bring to a boil for about 5 minutes. Pack in jars and seal. Yield: 4 pints.
