Sweet Zucchini Relish

10 cups zucchini, grated
4 cups onion, chopped
¼ cup salt
5 cups sugar
2 ¼ cups white vinegar
1 tablespoon celery seed
1 tablespoon ground turmeric
1 tablespoon pepper
Combine first 3 ingredients in large bowl, cover and refrigerate 8 hours or overnight. Transfer zucchini to a colander, rinse under cold water, drain well and press between layers of paper towels. Combine zucchini mixture, sugar and remaining ingredients in a Dutch oven. Bring to a boil over medium heat, reduce heat and simmer for 30 minutes. Pack in jars, remove air bubbles and seal. Process for 10 minutes at 5 pounds pressure.
