3 pounds red-skinned potatoes
2 large onions
½ teaspoon salt
¼ cup butter
3 tablespoons all-purpose flour
2 cups evaporated milk
¾ teaspoon salt
¼ teaspoon pepper
½ cup parsley
1-2 ounces pimentos
Peel and cut potatoes. Combine potatoes, onion and salt. Bring to a boil, cover, reduce heat; cook 5 minutes. Drain; set aside. Melt butter and add flour, stir until smooth. Cook 1 minute. Slowly add milk, stirring constantly. Cook over medium heat until thick. Add salt, pepper, parsley and pimento. Arrange potato and onion in casserole dish, pour sauce over top. Bake at 350 degrees for 45 minutes.
