Holiday Cheese Log

1 pound sharp cheddar cheese
8-ounces cream cheese
1 heaping tablespoon mayonnaise
½ teaspoon garlic powder
Chili powder, enough to give the logs a good coating
Grate cheddar cheese and allow to sit at room temperature for about an hour. Cut the cream cheese into small cubes and allow this to sit at room temperature for about same amount of time. Mix the two cheeses together. After the cheeses are well blended, add the mayonnaise and garlic powder. Stir to mix well and to the point that it is very creamy. Divide the cheeses into 2 balls of equal size. Place one ball on a piece of waxed paper that is about 15-inches long. Roll the ball into a “log” about 1 ½-inches in diameter. Shake chili powder on the log and on the paper. Keep rolling the log in the chili powder that’s on the paper and shake more chili powder on the log until the cheese log is completely coated. Move to a clean piece of waxed paper, roll up and refrigerate for several hours or until the cheese log becomes firm. Repeat the process with the other half of the cheese. Slice and serve on snack crackers. Cook’s note: ½ cup of finely chopped toasted pecans makes a nice addition.
