Ingredients
4-10-inch tortillas
All natural Pam cooking spray
1 small onion, chopped
1 small bell pepper, chopped
1 pound flank steak, cut into strips
1 tablespoon cornstarch
6 ounces pasteurized Velveeta cheese
Directions
Heat tortillas according to package. Spray large skillet with cooking spray for 2 seconds. Heat over medium heat; add onion and bell pepper and sauté 3 to 4 minutes or until tender. Remove from skillet and set aside. Toss steak strips with cornstarch. Spray for 2 seconds. Heat over medium heat and add one-half of steak strips; sauté 2 to 3 minutes and remove from skillet. Repeat for other half of steak strips. Microwave cheese in a glass bowl on high for 2 minutes, stirring once. Place steak strips evenly down center of each tortilla. Top evenly with vegetables and cheese. Roll up and serve immediately.
