Ingredients
2 cups sugar
2 teaspoons baking soda
1 1/2 cups Wesson oil
4 eggs
2 cups flour
2 teaspoons cinnamon
1/2 teaspoon salt
3 cups grated carrots
Frosting:
8-ounce package cream cheese
1 pound box confectioners' sugar
1 teaspoon vanilla extract
1 stick butter
1 cup pecans, chopped
Directions
Sift sugar, flour, baking soda, cinnamon and salt three times. Slowly add Wesson oil, and beat for 10 minutes (must be 10 minutes). Add eggs, one at a time, then fold in carrots. Butter and flour three pans. Bake at 350 for 30 minutes. Cool completely.
Frosting:
Mix cream cheese, butter, sugar and vanilla together until smooth. Add pecans and frost completely cooled cake.
