Eggplant Casserole

1 medium eggplant, cut into cubes
Juice from 1 lemon
1 small onion, chopped
1/2 cup water
1 heaping tablespoon mayonnaise
1 egg, slightly beaten
1/2 cup grated cheese
2 tablespoons oil or margarine
Salt and pepper to taste
1/2 cup crushed Ritz or plain crackers
Cook first four ingredients until tender. Do not drain. Add next five ingredients and mix well. Pour into a greased 9x9 baking dish. Sprinkle top with crackers. Bake for 25-30 minutes at 350 degrees, or until crackers are brown.
