New Sweet Potato Cobbler

1 9- or 10-inch unbaked pie crust
3-4 medium sweet potatoes
3/4 cup white or brown sugar
1/2 teaspoon nutmeg (optional)
1 teaspoon cinnamon
1 teaspoon orange zest
1/4 cup fresh orange juice
4-6 tablespoons butter
Slice sweet potatoes 1/4-inch to 3/8-inch thick and cook in boiling water to cover just till barely tender. Reserve stock. Carefully transfer slices into deep baking dish and pour stock over them. Mix rest of ingredients except butter and pour over potatoes. Dot generously with butter and arrange pie crust over all. Pinch edges and cut 3-4 slits in top. Bake 10 minutes at 450 degrees. Reduce heat to 375 degrees and bake 15-20 minutes longer. Cool slightly before serving.
