Ingredients
6 medium potatoes, unpeeled
4 cups water
1 tablespoon olive oil
1/2 cup egg substitute
1 cup low-fat sour cream
2-ounces low-fat cheddar cheese, shredded
Ground pepper, to taste
Directions
Wash potatoes and place in a saucepan with water; bring to a boil, lower heat and cook 25 minutes. Drain, let cool and slice into 1/4-inch slices. Heat oil in a skillet, add onion and sauté for five minutes. Mix egg, sour cream and pepper in a bowl with onion. Lay potato slices in a casserole dish and spoon onion mixture over them. Top with cheese and bake for 35 minutes at 350 degrees or until top is browned.
