Yankee-Rebel Feud Cake

8 whole eggs
5 cups finely chopped pecans
2 cups granulated sugar
1 cup plain flour
1 teaspoon salt
4 teaspoons baking powder
1 tablespoon vanilla extract
1 1/2 quarts whipping cream
or dessert topping
1/4 chopped pecans
1 cup powdered sugar, if whipped cream is used
Beat eggs at high speed for five minutes. Add sugar, vanilla, flour and baking powder and beat another five minutes. Add pecans. Beat at low speed for one minute to moisten well. Pour into three greased and paper-lined 9-inch cake pans. Bake at 350 degrees for about 15 to 20 minutes. Remove immediately from pans to wire cake racks and cool. Cake may fall slightly but this is natural. For topping: Whip powdered sugar and cream until stiff. Frost layers on top and sides of cake and sprinkle generously with pecans.
