5 pounds pork shoulder or butt
1 1/2 tablespoons salt
2 teaspoons pepper
1 teaspoon allspice
1 1/2 tablespoons dried basil
1 tablespoon oregano, dried
1 tablespoon orange zest
2 teaspoons thyme, dried
1 teaspoon paprika
1 tablespoon crushed red pepper (can be reduced)
1 teaspoon sage, dried
Grind pork. Mix seasonings together and mix them well into ground pork. Make into patties and freeze.
