Old-Fashioned Lemon Cheese Cake

3/4 cup shortening
1 1/2 cups sugar
2 1/2 cups sifted flour
3 teaspoons baking powder
1 teaspoon salt
1 cup milk
5 egg whites
1/3 cup sugar
1 1/2 teaspoons vanilla extract
5 egg yolks
1 whole egg
1 cup sugar
1 stick oleo (1/2 cup)
2 lemons, juice and grated rind
Cream shortening and sugar until light and fluffy. Sift flour, baking powder and salt together three times. Add dry ingredients to creamed mixture alternately with milk. Beat after each addition until smooth. Beat egg whites until foamy. Add 1/3 cup sugar gradually beating, only until meringue will hold up in points. Fold into batter. Add vanilla. Bake in three paper-lined cake pans at 350 degrees for 30 minutes or until done.
Cook in double boiler. Mix egg yolks, egg, sugar, oleo and lemon juice in top of a double boiler. Cook until thick, stirring occasionally. Add lemon rind. Place in between and on top of cake layers.
