1 3-pound chicken, rinsed and cut into eight pieces
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup all-purpose flour
2 large eggs
Vegetable oil
Line a baking sheet with white paper towels. Season chicken with salt and pepper. Place flour in a large paper bag. In a medium bowl, beat the eggs. Dip one piece of chicken at a time in egg, shake in the flour to coat completely, and place on baking sheet. Pour enough oil into large skillet to come one-third up the sides and heat over high heat until very hot but not smoking. Using tongs, carefully add chicken and fry until golden brown and shows no signs of pink (at bone).
