Meat Loaf Pot Roast

2 pounds lean ground beef
2 eggs
1 envelope onion soup mix
3/4 cup water
1 1/2 cups bread crumbs
1/3 cup ketchup
3 medium carrots, cut into pieces
3 medium Vidalia or Texas sweet onions, quartered
3 medium potatoes, quartered
Salt and pepper
Preheat oven to 350 degrees. Combine all ingredients, shape into loaf and place in 13x9-inch baking pan. Add carrots, onions and potatoes. Arrange vegetables around meat loaf, spray with Pam, and salt and pepper to taste. Cover with foil and bake one hour, uncover and bake for 10 minutes more. Serve with your favorite beef or mushroom gravy. Serves eight.
