6 medium yellow squash
3 cups soft bread crumbs
1/2 cup Parmesan cheese
1 small onion, chopped
1 teaspoon salt
Dash of black pepper
2 eggs, beaten
2 tablespoons butter
Boil squash in enough salt water to cover for 5 minutes; drain, cut in half and remove pulp. Combine bread crumbs, cheese, onion, salt, pepper and eggs. Fill squash shells, dot with butter and sprinkle with more cheese. Bake 30 minutes at 350 degrees.
