Grandma's Fruitcake

3 1/2 sticks butter
2 cups sugar
4 cups plain flour
1 tablespoon baking powder
6 eggs, separated
3 cups chopped pecans (one pound)
1/2 pound candied cherries, chopped
1/2 pound candied pineapples, chopped
1 1/2 ounces lemon extract
1 teaspoon salt (less if preferred)
Cream sugar and butter. Add baking powder and salt to three cups flour; add alternately with egg yolks to other mixture. Add lemon flavoring. Dredge fruit with one cup flour and add to mixture. Beat egg whites and fold into mixture. Bake at 250 degrees for three to five hours.
