1-2 cans pink salmon fillets, about 2 pints
1/2-1 onion, chopped
3 eggs
1/2 cup self-rising flour
1/2 cup self-rising cornmeal
Dash of pepper and salt
In a bowl, break up the salmon and combine with the rest of the ingredients. If too soft, add more cornmeal. Drop by tablespoons into a deep fryer until golden brown. Dip out onto paper towel.s Makes about 30 hushpuppies.
