Ingredients
2-3 large, ripe, fresh tomatoes
1 can 11 1/2-ounce V-8 Juice
1 small to medium red onion, cut into chunks
2 cucumbers, peeled, seeded and chopped
1/4 cup celery coarsely chopped
1/2 cup carrot, coarsely chopped
1/2 cup red wine vinegar
6 tablespoons minced fresh cilantro
2 tablespoons minced fresh parsley
1 1/2 teaspoon salt
1 1/2 teaspoon Tabasco
Directions
Puree all ingredients in a blender. Adjust to taste. Chill for four hours (or up to five days). Garnish with strained yogurt, black olives or sliced avocado.
