Ingredients
1 cup meal
1 cup milk
2 eggs, beaten
1/2 teaspoon baking soda
1/2 cup bacon drippings or oil
1 17-ounce can creamed corn
1 pound ground beef
1 package taco seasoning
1 cup water
8 ounces of grated cheese
1 chopped onion
4-5 chopped Jalapeño peppers
Directions
(Preheat oven to 350 degrees)
Combine meal, milk, eggs, soda, oil and corn in a mixing bowl. Blend well and set aside. Sauté ground beef until done, drain thoroughly, add package of taco seasoning and 1 cup water, cook for about 2 minutes and set aside. Pour half of meal batter into a greased 13x9 pan- then layer cheese, ground beef mixture, onions, and Jalapeño peppers. Pour remaining batter on top and bake 350 degrees for 50 minutes.
