8 ounces (about 9 pieces) ripple-edged lasagna noodles, uncooked
2 cups (16 ounces) ricotta cheese
1/2 cup shredded mozzarella cheese
2 tablespoons parmesan cheese
2 tablespoons dried parsley flakes
1 egg
1/2 teaspoon oregano
Dash salt
Dash pepper
1 3/4-cups (12 1/2-ounce jar) spaghetti sauce
Cook lasagna noodles according to package directions; drain well. Separate noodles and lay out flat on waxed paper or aluminum foil to keep pieces from sticking as they cool. Combine in medium bowl- ricotta, mozzarella, Parmesan, parsley flakes, eggs, oregano, salt and pepper for filling. Spread about 1/4 cup cheese filling on each noodle to within 1 inch at one end; beginning at filled end roll up jelly roll fashion. Pour about 3/4 cup spaghetti sauce on bottom of 9x11 inch microwave-safe dish or casserole. Place roll-ups, seam side down, in single layer in pan; cover with remaining sauce. Sprinkle with additional Parmesan cheese. if desired. cover with waxed paper; microwave on high for 8-12 minutes, or until filling is hot and bubbly. Makes 9 rolls.
