Miniature Cheesecake

1 cup graham cracker crumbs
3 egg yolks
3/4 cup sugar
16 ounces cream cheese, softened
3 egg whites, stiffly beaten
1 cup sour cream
1/2 teaspoon vanilla extract
1 jar maraschino cherries
Melt butter and pour into muffin cups. Sprinkle graham cracker crumbs into buttered muffin cups; shake off excess. Beat egg yolks with 3/4 cup sugar and cream cheese in mixer bowl until smooth. Fold in egg whites. Spoon into prepared muffin cups, filling 1/2 to 2/3 full. Bake at 350 degrees for 30 to 40 minutes (brown on top). Cool in pan for 10 minutes. Remove to wire rack to cool completely; centers will fall. Combine sour cream, 3/4 cup sugar and vanilla in baking dish; mix well. Bake at 350 degrees for seven minutes, stirring after five minutes. Cool. Spoon into centers of cheesecakes. Put in refrigerator overnight. Top with one cherry per cheesecake.
