1 1/4 teaspoon garlic powder
1 teaspoon salt
1 teaspoon onion powder
1 teaspoon dried sweet basil leaves
1/2 teaspoon sweet paprika
1/2 teaspoon black pepper
1/2 teaspoon white pepper
1/2 teaspoon dried oregano leaves
1/2 teaspoon ground cumin
1/2 teaspoon cayenne
1 4-to5-ounce catfish fillets
1/2 cup toasted breadcrumbs
2 tablespoons finely chopped fresh parsley
3 tablespoons finely sliced green onions
1 tablespoons olive oil
Combine the seasonings in a small bowl. Sprinkle all surfaces of fish evenly with 4 teaspoons of the seasoning mixture. Preheat the oven to 450 degrees. Combine the breadcrumbs, parsley, green onions and remaining seasoning mix in a bowl. Add the oil and mix it in with you fingers until crumbs are moist. Dredge the fish fillets one at a time in the breadcrumb mixture. Shake off any excess crumbs. Place the seasoned fish on a nonstick baking sheet, presentation side up and cook for six minutes. Turn the fish over and cook six minutes. turn over one more time and cook until done (about four minutes more). Serve immediately.
