Chicken Enchilada Casserole

4 boneless skinless chicken breasts
2 small cans mild enchilada sauce
2 cups cheddar cheese
1 package of 12 corn tortillas
Sliced black olives, optional
Boil chicken breasts. Chop chicken. Mix chicken and one cup of cheddar cheese. Set aside. In a separate shallow dish, pour one can of the enchilada sauce. Prepare tortillas according to package directions one at a time. After cooking each tortilla dip both sides in enchilada sauce. Fill each with 2-3 tablespoons of chicken cheese mixture in the center and roll from the edge to the other leaving the ends open. Place in a greased casserole dish. Pour the other can of enchilada sauce over the rolled enchiladas. Top with the remaining cup of cheese and black olives.
