Squash Casserole

1 1/2 pounds squash, fresh or frozen
2 medium onions, sliced
1 package dry herb-flavored stuffing mix
1 stick oleo, melted
1 small can pimento
3 or 4 medium carrots, grated
1 cup sour cream
1 can cream of chicken soup
Salt and pepper to taste
Cook squash and onions until tender. Drain. Stir half of the stuffing mix in melted oleo. Sprinkle on bottom and side of casserole dish (reserving enough stuffing for topping). Mix remaining ingredients with squash and onions. Pour into casserole dish and top with remaining stuffing. Bake in a 350-degree oven for 30-40 minutes.
