1 pound ground round
3 medium zucchini, thinly sliced
1/4 cup sliced green onion
2 teaspoons salt
1/4 teaspoon garlic powder
Salt and pepper to taste
1 can chopped green chilies
3 cups cooked rice
1 cup sour cream
2 cups grated Monterey Jack cheese
1 large tomato, sliced
Directions
Brown beef and drain grease. Add zucchini, onion and seasoning and cook until tender crisp. Add chilies, rice, sour cream and 1 cup of cheese. Spoon this into a buttered, shallow 2-quart casserole dish. Arrange tomato slices on top. Bake at 350 degrees for 20 minutes. Add remaining cheese and bake for 5 more minutes. If you like it spicier, you can substitute Pepper Jack cheese for the Monterey Jack.
