Ingredients
2 cups cooked, mashed carrots
13 ounces evaporated milk
1 cup sugar
2 eggs, beaten
1/2 teaspoon salt
1/4 teaspoon ginger
1/2 teaspoon allspice
1/2 teaspoon cinnamon
1 unbaked 9-inch pie crust
Directions
Combine all ingredients and beat for 2 minutes. Pour filling into the pie crust. Bake at 400 degrees for 15 minutes then lower temperature to 350 degrees and bake another 45 minutes or until filling is firm.
