Creamy Curried Seafood

1/2 cup thinly sliced onion
1/2 cup skim milk
2tablespoons unbleached flour
1 teaspoon curry
1/2 cup chicken broth, fat removed
1 tablespoon dried parsley
1/4 teaspoon salt, optional
1 pound seafood, such as a firm fish (cod, halibut) cut in bite size pieces, scallops, and/or shelled and deveined shrimp
Spray a skillet with non-stick cooking spray. Sauté onion until soft. Meanwhile, combine milk flour in covered container and shake well to prevent lumps. In the skillet add curry, flour mixture, broth and seasonings. Bring to a slow boil, stirring constantly until thickened. Reduce heat, add seafood, and simmer just until seafood is cooked. Serve over rice. Makes 4 servings. Per serving: 145 calories; 2 grams fat.
