Squash Casserole

2 cups cooked yellow squash
1 can cream of chicken soup
1 cup sour cream
1 carrot, grated
Herb seasoned bread crumbs
1/4 cup grated Cheddar cheese
1 teaspoon salt
1/2 teaspoon pepper
1 small onion, chopped
Mash squash in a bowl. Add soup, sour cream, carrot, onion, salt and pepper. Spray casserole dish with non-stick spray. Cover bottom of dish with bread crumbs. Add squash mixture. cover with additional bread crumbs and dot with butter. Bake at 350 degrees for 35 minutes. Remove from oven and sprinkle with cheese. Let stand 10 to 15 minutes before serving.
