Spinach Souffle

4 tablespoons butter or margarine
4 tablespoons flour
1 teaspoon salt
1/2 teaspoon pepper
1 cup milk
1 cup grated Cheddar cheese
1 egg
1 cup cooked, drained spinach
Melt butter and remove from heat. Blend in flour and seasonings. Mix until smooth, gradually stirring in milk until well blended. Cook over low heat, stirring constantly, until thick and smooth. Stir in cheese and egg. Mix until cheese is melted and thoroughly blended. Add spinach, mixing well. Pour into a greased casserole dish and bake at 350 degrees for 45 minutes. Serves 4 to 6.
