Cornbread Salad

1 package (8 1/2 ounces) cornbread mix
1/3 cup milk
4 medium tomatoes, peeled and chopped
9 slices bacon, cooked and crumbled
1/4 cup pickle juice
1 egg
1 green pepper, chopped
1/2 cup sweet pickles, chopped
1 cup mayonnaise
Combine cornbread mix, egg and milk. Stir well. Spoon mixture into a greased 8-inch baking pan. Bake at 400 degrees for 15 to 20 minutes. Cool and crumble cornbread. Set aside. Combine tomatoes, green pepper, onion, pickles and bacon. Toss gently and set aside. Combine mayonnaise and pickle juice. Stir well and set aside. Layer half of cornbread, tomato mixture and mayonnaise mixture in a large glass bowl. Repeat layers. Cover and chill for 2 hours. Makes 8 servings.
