Ingredients
2 cups black beans, drained
2 15-ounce cans chili
3/4 cup whole kernel corn
1/2 cup chopped onion
2 tablespoons whole wheat flour
1/2 teaspoon chili powder
Topping:
3/4 cup cornmeal
1/3 cup whole wheat flour
1 teaspoon baking powder
3/4 cup non-fat buttermilk
2 egg whites
1/4 cup honey
Directions
Preheat oven to 375 degrees. Mash black beans with fork in a medium saucepan. Stir in chili, corn, chopped onion, flour and chili powder. Cook on medium high heat for 10 minutes, stirring frequently. Transfer mixture to a 9x12 glass baking dish. In a small bowl mix topping ingredients together with a fork until well blended. Spread on top of chili mixture. Bake at 375 degrees for 20 to 25 minutes or until topping is set and nicely browned.
