1 9-inch pie crust, unbaked
3 eggs
1 1/2 cups half & half
1 cup shredded Cheddar cheese
1 cup shredded Swiss cheese
1 10-ounce box frozen chopped spinach, thawed and drained
6 slices bacon, cooked and crumbled
Bake pie crust, according to directions, about 10 minutes and cool. Layer cheese, spinach then bacon. Beat eggs with half and half. Pour over top. Bake at temperature of pie crust for 40 to 60 minutes or until it is golden brown and set.
