Ingredients
6 to 8 boneless chicken breast halves
1 cup flour
1 tablespoon paprika
1/4 cup oil
1 15-ounce can tomato sauce
1/3 can water
3 cloves garlic, chopped
1 teaspoon salt
3/4 teaspoon basil
1 small can mushrooms
1 3-ounce bottle stuffed green olives
1/2 cup sherry
1/2 cup almonds
Grated Parmesan cheese
Directions
Mix flour and paprika. Dredge chicken pieces in flour mixture. Heat oil in a large frying pan. Brown chicken in oil. Combine tomato sauce, water, seasonings and mushrooms. Add to chicken. Cover and simmer gently for15 minutes. Transfer chicken to a 9x12 baking dish. Add olives (with liquid), sherry and almonds to pan sauce. Mix until well blended then pour over chicken. Sprinkle with cheese. Bake at 350 degrees for 40 minutes. You may cover it at the end of baking period to prevent too much loss liquid.
