1 cup plain unbleached flour + 2 tablespoons
1/4 teaspoon baking soda
1 teaspoon baking powder
Pinch of salt
4 tablespoons shortening, divided
1/2 cup buttermilk
Preheat oven to 500 degrees. Melt 2 tablespoons shortening in a cast iron skillet. While shortening is melting, mix biscuits. First combine dry ingredients. Cut in 2 tablespoons shortening. Add buttermilk and stir. Turn out on a floured surface and knead gently. Use hand to press dough out to 1/2-inch thickness. Cut with biscuit cutter. Place biscuits in hot skillet 1 at a time. Flip so that both sides are coated with melted shortening. Bake approximately 10 minutes until golden brown.
