Crunch Crust Nectarine Pie

1/3 cup plus 2 tablespoons sugar, divided
2 tablespoons water
1 cup low-fat granola
8 ounces fat-free cream cheese
1/2 teaspoon vanilla
3 fresh nectarines, sliced
Combine 1/3 cup sugar and water in a small saucepan. Boil about 4 minutes or until syrup begins to turn light golden brown. Add granola, mixing it quickly with a fork. Turn onto a non-stick or greased baking sheet and let cool. Place in a plastic bag and crush with a rolling pin. Turn 2/3 of the mixture into the bottom, not sides of a 9-inch pie pan. Beat cream cheese with vanilla and remaining sugar. Drop spoonfuls of filling into the pie shell. Spread gently to level over crumb crust. Top with nectarine slices and sprinkle remaining crunch mixture at edges. Chill at least 2 hours before serving.
