Country Garden Biscuits

1 egg
1/2 cup Pet Light Evaporated Skimmed Milk
1/2 teaspoon thyme
3/4 cup yellow corn meal
1/3 cup walnuts, chopped
1 1/2 cups buttermilk baking mix
1/2 cup firmly packed shredded zucchini
3 tablespoons sugar
3 tablespoons finely chopped red pepper
Preheat oven to 425 degrees Fahrenheit. In a medium bowl beat together egg, milk and thyme. Stir in corn meal and let stand 5 minutes. Reserve 2 tablespoons walnuts for topping. Stir remaining walnuts and last 4 ingredients into corn meal mixture. Dough will be very stiff. Drop by heaping tablespoons onto a lightly greased baking sheet. Sprinkle with reserved walnuts. Bake for 10 to 12 minutes or until lightly browned. Makes 12 biscuits.
